I dont use Evoolution, but in SM, just go to "Folders" along to top to
delete, add and edit folders by name. (When you create a folder, you can
choose what it should be a sub folder of via pull down list.)

Often, it is referred to as "subscribing to a new imap folder"

That may help you with the new imap folders...
